The old, ungrafted vines grow in the island’s porous volcanic soils, where pumice, extremely low fertility and scarce water help create fruit of remarkable concentration. Gaia developed Ammonite to showcase both the character of Assyrtiko and the individuality of this exceptional site. Naturally high acidity gives the wine energy and structure, while Santorini’s distinctive volcanic and maritime influence contributes pronounced mineral and saline character. The result is a full-bodied yet finely balanced white wine designed not only for immediate enjoyment but also for extended bottle development.\u003c\/p\u003e\n\u003cp\u003eThe wine spends more than 15 months in contact with its lees, with a small proportion matured in French oak to add breadth and soften the formidable acidity without overwhelming the vineyard character. This extended maturation gives Ammonite substantial texture, complexity and impressive length while retaining the tension expected from high-quality Santorini Assyrtiko. Citrus, ripe peach and grapefruit are framed by stony mineral notes and a savoury sea-salt character across the palate. Its combination of concentration, freshness and structure allows it to accompany dishes considerably richer than those normally associated with white wine.
