The vines are more than 40 years old and are rooted in granite-based soils that are brown, slightly acidic, pebbly and naturally well drained. Greater soil depth toward the bottom of the slope supports a richer and more concentrated expression than the estate’s lighter Riesling bottlings. The steep, south-facing site receives excellent sunlight, an important advantage for the late-ripening Riesling variety. Its warm granite soils encourage ripeness while preserving the purity, finesse and mineral definition associated with Schlossberg. The vineyard is certified organic by Ecocert and biodynamic by Demeter.\u003c\/p\u003e\n\u003cp\u003eThe grapes were harvested by hand at optimal maturity and gently pressed as whole clusters in pneumatic presses. Fermentation occurred naturally with indigenous yeasts in traditional old oak vats, allowing the vineyard character to remain at the centre of the wine. It was then matured for 11 months in neutral old foudres before bottling. The wine is exceptionally dry, carrying only 0.7 grams per litre of residual sugar, yet its concentration gives the palate generosity and substance. White flowers, citrus zest and ripe tropical and stone-fruit notes are framed by vivid acidity and granitic minerality. The palate is structured and dense, with orange, apricot and Mirabelle plum tones developing alongside almond, wet stone and citrus pith. Its freshness, structure and long mineral finish suggest excellent development through 2040.
