The vines average approximately 65 years of age and include parcels in Les Blanches, Les Grands Champs and Pluchots. Here, Bathonian limestone soils rich in iron and covered by brown silt contribute freshness, mineral definition and finesse to the fruit. The vineyards sit between approximately 230 and 370 metres of elevation and are worked according to biodynamic principles, without synthetic herbicides or insecticides. The result is a village Volnay combining old-vine concentration with the perfume and elegance traditionally associated with the appellation.\u003c\/p\u003e\n\u003cp\u003eThe grapes are harvested entirely by hand and carefully sorted before fermentation with indigenous yeasts. The wine is subsequently matured in used French oak barrels, deliberately limiting the influence of new oak so that Pinot Noir and vineyard character remain at the forefront. The 2023 shows a vivid ruby colour and expressive aromas of violet, redcurrant and cherry, with spice and cooked plum developing with age. On the palate it is fresh and fruit-driven, with a supple texture, fine structure and a warmer impression toward the finish.
