Harvesting is carried out by hand with careful selection of the fruit before slow pneumatic pressing. The juice is transferred to 228-litre French oak barrels, with approximately 15% new oak, where alcoholic and malolactic fermentation occur naturally. The restrained élevage allows the character of Les Folatières to remain central, balancing ripe fruit with freshness and pronounced mineral tension.\u003c\/p\u003e\n\u003cp\u003eThe wine spends around 18 months on fine lees without bâtonnage before being assembled in stainless steel ahead of bottling. There is a sappy, textural quality through the mid-palate, while the finish turns dry, fresh and persistent.
