The vines average approximately 45 years of age, bringing additional concentration and depth to the fruit. Vineyards are located across the appellation around Fuissé, Solutré, Vergisson and Pouilly, where Chardonnay has long been the defining white variety. The combination of mature vines and limestone-rich soils gives the wine a balance of ripe fruit, freshness and mineral definition. The 2023 presents the generous texture associated with Pouilly-Fuissé while retaining a precise, energetic profile.\u003c\/p\u003e\n\u003cp\u003eHarvesting is carried out by hand with selection in the vineyard before the grapes are lightly crushed and gently pressed. Following a light settling, the must is transferred to 500-litre French oak barrels, approximately 10% of which are new, where alcoholic and malolactic fermentation take place using indigenous yeasts and bacteria. The wine matures on fine lees for around 10 months without bâtonnage, helping develop texture while maintaining freshness and clarity. Before bottling, the separate barrels are racked into tank, followed by light fining and filtration.
