The domaine’s vines average around 40 years of age and grow across chalkier upper soils with deeper clay-rich layers lower in the vineyard. This combination gives the wine both concentration and a firm mineral structure. The 2023 vintage brings generous ripe fruit together with citrus, white-flower and subtle honeyed notes. Despite its breadth, the wine maintains freshness, precision and the underlying mineral character associated with the site.\u003c\/p\u003e\n\u003cp\u003eHarvesting is carried out manually with selection in the vineyard before the grapes are lightly crushed and gently pressed. After a light settling, the must is transferred to 228-litre French oak barrels, approximately 15% of which are new, where both alcoholic and malolactic fermentation take place using indigenous yeasts and bacteria. The wine is then matured on fine lees for around 18 months without bâtonnage, developing density and complexity while retaining freshness. One month before bottling, the individual barrels are racked into tank for blending, followed by light fining and filtration, with bottling conducted according to the lunar and biodynamic calendar.
