The fruit comes from vines between approximately 35 and 75 years old, planted across the varied sands, clay, limestone and rounded-pebble soils found throughout Châteauneuf-du-Pape. A rainy spring followed by a hot, dry summer shaped a vintage noted by the domaine for its balance, freshness and finesse. Black fruit, raspberry, blackcurrant and prune form the core of the wine, accompanied by Provençal herbs, spice and savoury complexity. The relatively fresh structure of 2021 gives this powerful appellation a particularly elegant and approachable expression.\u003c\/p\u003e\n\u003cp\u003eThe grapes were harvested by hand and approximately 60% destemmed before a temperature-controlled maceration lasting between 25 and 35 days. After fermentation, the wine matured for around 12 months in a combination of oak vessels, demi-muids, concrete vats and barrels before bottling in spring. The palate is ripe but controlled, combining blackberry, plum and spiced cherry fruit with silky tannins and lively acidity. Notes of peppery garrigue, leather and dark chocolate add savoury depth without obscuring the fruit.
