The parcels stretch across the appellation and benefit predominantly from south and south-east exposures, bringing together different expressions of Chardonnay in one cuvée. Grapes are harvested by hand and carefully sorted again at the winery before fermentation. The domaine farms organically, with the 2025 release carrying organic certification. The finished wine captures the generous fruit of the southern Burgundy landscape while retaining the freshness and mineral character central to Famille Paquet’s style. \u003c\/p\u003e\n\u003cp\u003eFermentation is carried out slowly at cool temperatures with indigenous yeasts in temperature-controlled stainless-steel tanks. The wine then remains on its lees for approximately six to seven months in stainless steel, preserving aromatic purity and avoiding overt oak influence. Aromatically, the 2025 shows green apple, citrus, peach and white flowers, leading to a balanced palate with lively acidity. Apple and citrus fruit are complemented by a lightly saline mineral quality that provides definition and freshness.
