The Domaine’s 3.8-hectare holding combines five parcels with south and south-east exposure, rooted in Kimmeridgian clay-limestone marl rich in fossilised Exogyra virgula oyster shells. The vines are mature, with the current estate information placing them broadly between 63 and 73 years of age. The 2024 season was exceptionally challenging, with frost, hail and persistent mildew reducing the Vaillon crop by approximately 75%. Final yields were only around 10 hectolitres per hectare, giving the surviving fruit unusual concentration and scarcity.\u003c\/p\u003e\n\u003cp dir=\"auto\"\u003eThe grapes were harvested by hand, carefully sorted and gently pressed before fermentation with natural yeasts. Approximately 55% of the wine was handled in temperature-controlled stainless steel, while 45% was matured in seasoned barrels for eight months, with less than 5% new oak, before blending. Full malolactic fermentation and extended maturation give the wine subtle creaminess while allowing the mineral character of Vaillon to remain prominent. The 2024 shows citrus, green apple, white peach and pear alongside chalk, wet stone and restrained oak spice.
