Michaut established Domaine 47°N 3°E independently in 2018 after working within his family’s wine estate for many years. The domaine’s name refers to the geographical coordinates of Beines, reflecting his belief that vineyard origin and terroir should take precedence over the winemaker’s identity. Fruit for the Chablis comes from the Vau Brou parcel, located in a small valley outside Beines and planted with Chardonnay in 2000. The vines grow in clay-limestone soils with white marl and are cultivated according to the estate’s organic and biodynamic approach. \u003c\/p\u003e\n\u003cp\u003eThe grapes are harvested at optimal maturity and sorted immediately before pressing to ensure that only sound fruit enters the winery.
