The wine is made by Guillaume Michaut at his small domaine in Beines, in the heart of the Chablis region. The Beauroy vines were planted by his grandfather, Henri Michaut, in 1980 and form part of the family vineyard heritage that inspired Michaut to establish his independent estate. Since 2017, he has cultivated this parcel using methods drawn from organic and biodynamic viticulture. The grapes are harvested by hand and sorted immediately after picking to retain only healthy, fully mature fruit. This meticulous selection reflects Michaut’s low-intervention approach and his focus on expressing the individual character of each vineyard parcel. \u003c\/p\u003e\n\u003cp\u003eFollowing pressing, the juice undergoes natural settling at a low temperature before fermentation. Vinification takes place in stainless-steel tanks within the domaine’s underground cellar, where the temperature is regulated naturally. Alcoholic and malolactic fermentations are carried out using the yeasts and bacteria naturally present in the grape juice and cellar. The wine is then matured on its fine lees for approximately 12 months, increasing aromatic volume and developing a fuller, more composed texture. The 2023 Beauroy combines ripe citrus and white stone fruit with subtle iodine, savoury mineral and delicate woody nuances. Its generous palate is supported by firm structure, bright freshness and the saline character associated with Chablis Premier Cru.
