Champagne Bollinger La Grande Année 2012
Champagne Bollinger La Grande Année 2012 embodies the artisanal expertise that Bollinger has always upheld, which continues to be put to use in its production. Vinification takes place exclusively in small old oak barrels (20 years old on average), maintained in Bollinger’s cooperage, of which there are almost 3,500. Riddling and disgorging are performed entirely by hand, and take place after ageing on the lees in bottles with natural corks.
This champagne is delicate in colour and the golden hues are signs of the wine's maturity. The nose is full and expressive with notes of almond, apricot, and hazelnut, followed by hints of cereals and honey blending together. Exceptional structure and texture runs across the palate with a silky, dense, and long finish.
Pair this beautiful champagne with hen of the woods mushroom, potato emulsion and truffle or grilled oyster, smoked butter and sea purslane.
