In the current release, Chardonnay comes from Grand Cru sites in the Côte des Blancs, while Pinot Noir is sourced from Premier and Grand Cru vineyards including the Montagne de Reims, Aÿ and Mareuil-sur-Aÿ, with Meunier coming from both banks of the Vallée de la Marne. The present blend is based on the 2017 harvest and incorporates reserve wines from a collection extending back to 2006.\u003c\/p\u003e\n\u003cp\u003eUnlike many non-vintage Champagnes predominantly fermented in stainless steel, Le Sous Bois undergoes low-temperature vinification entirely in older oak casks, giving the wine its characteristic depth, savoury complexity and rounded texture. It spends approximately five years ageing on its lees in the Billecart-Salmon cellars before release and is finished at an Extra Brut dosage. The aromatic profile combines pastry, citrus and orchard fruits with malty nuances that evolve toward mocha and bergamot. On the palate, flavours reminiscent of soft milk bread, melted butter and gentle spices are balanced by freshness and fine Champagne acidity. Its combination of vinous richness and structural precision makes it particularly suited to food, with Billecart-Salmon recommending hard cheeses, white meats with morel mushrooms and girolle mushrooms. The Maison recommends serving Le Sous Bois at approximately 10°C and gives the magnum format an ageing potential of around 10 to 12 years.
