Bass Phillip was established in 1979 and has long specialised in Pinot Noir and Chardonnay, with its original vineyard replanted primarily to these two Burgundian varieties during the mid-1980s. The estate’s vineyards have been managed organically since 1993 and biodynamically since 2002, reflecting a philosophy centred on natural balance and minimal intervention. No irrigation is employed, while low cropping and dense vineyard planting are used to build flavour intensity, texture and mineral expression. South Gippsland’s deep, mineral-rich soils, natural humidity, reliable rainfall and cooling maritime influence contribute freshness and length to the finished wines.\u003c\/p\u003e\n\u003cp\u003eIn the winery, Bass Phillip favours natural yeast, limited pumping, minimal racking and restrained additions, allowing the vineyard character to remain at the centre of the wine. Fining agents are not used, and the estate states that its white wines are generally matured in oak for approximately twelve to fifteen months. The 2024 Estate Chardonnay presents a generous core of ripe orchard and stone fruit, supported by citrus detail and integrated French oak. Despite its concentration, the wine retains freshness and energy through a measured line of acidity. Its youthful structure suggests that further complexity will emerge with careful bottle maturation.
