Babo Chianti 2021

The Babo Chianti 2021 is picked in vineyards in Toscano. Ruby red in colour the palate shows morello cherry and earthy characters. Light of weight through the mouth with gentle acidity and fine ‘al dente‘ tannins complementing.

Highly gluggable on it’s own or with food. The ferment is split in two. The first a full carbonic maceration with 100% whole bunch and the other 100% destemmed fruit. After 12 days on skins they are then
pressed to cement vats for malolactic fermentation where it remains for a further 8 months prior to bottling.

The name BABO is an Italian wine making term, referring to the measurement of Baume.
