The fruit comes from extremely old, ungrafted vineyards in Episkopi, with vines reaching at least 200 years of age and trained in Santorini’s traditional kouloura basket system. Harvest takes place at very deep ripeness, almost a month after the main picking period, resulting in exceptionally low yields. After harvest, the grapes are laid out under the Santorini sun for fourteen days, concentrating their sugars, acidity and flavour. The resulting wine combines extraordinary sweetness and density with the naturally vivid acidity for which Santorini’s indigenous white varieties are renowned.\u003c\/p\u003e\n\u003cp\u003eNatural fermentation takes place slowly in old concrete vats, followed by three years of maturation in concrete and a further sixteen years in old wooden vessels. This prolonged ageing develops a deep amber colour and extraordinary aromatic complexity while preserving remarkable freshness. The wine shows layers of caramel, marmalade, dried figs, raisins, prunes, mocha, treacle and candied orange peel, supported by bright acidity that prevents its considerable sweetness from becoming heavy. Its texture is dense, luscious and mouth-coating, yet the palate remains energetic and beautifully balanced.
