Fruit is sourced from selected vineyards in Akrotiri, Messaria, Karterados, Megalochori and Pyrgos, with vines approximately 100–120 years old. These ancient vineyards grow in Santorini’s distinctive volcanic soils, where very low yields encourage remarkable fruit concentration and mineral intensity. The 2025 combines ripe citrus and stone-fruit character with the salty, stony personality for which Santorini Assyrtiko is renowned. Its concentration is balanced by freshness and structure, creating a wine with both immediate appeal and strong potential for further development.\u003c\/p\u003e\n\u003cp\u003eThe grapes are fermented in stainless-steel tanks, preserving the purity and precision of the Assyrtiko fruit. After fermentation, the wine remains for approximately six months in stainless steel on its fine lees, adding texture, depth and subtle savoury complexity without obscuring its mineral character. Aromas of lemon, citron, grapefruit and peach are joined by honeysuckle, dough, wet stone and lime. The palate is concentrated and finely textured, with peach, green apple and citrus carried by bright acidity and pronounced volcanic minerality.
