The ungrafted vines are more than 200 years old and are trained in Santorini’s traditional kouloura basket system, growing in the island’s volcanic soils. Extremely low yields of approximately 14–15 hectolitres per hectare give the wine remarkable depth, intensity and mineral concentration. The vineyard sits at approximately 135 metres elevation, where the combination of volcanic terrain, strong sunlight and maritime conditions shapes Assyrtiko’s naturally high acidity and saline character. The resulting wine is powerful yet precise, combining ripe fruit with the tension and mineral drive characteristic of old-vine Santorini.\u003c\/p\u003e\n\u003cp\u003eFermentation takes place in stainless-steel vats for close to three weeks, with a portion fermenting spontaneously with indigenous yeasts. The wine then matures for 11 months in stainless steel on its fine lees, with regular bâtonnage early in the ageing period and gradually decreasing frequency thereafter. Aromas of lemon, grapefruit, orange peel, green apple, peach and honey are layered over intense wet-stone minerality and subtle herbal notes. The palate is rich and concentrated yet remains energetic, with sharp acidity, citrus intensity and a distinctive saline edge providing balance.
