The fruit is also subject to a very gentle four-hour press, and the juice is fermented with natural yeasts (a rarity in Chablis). These traditional methods along with the hand harvesting, the quality of the terroir, the low yields (circa 35 hl/ha) and the full ripeness levels at which the fruit was harvested, helps to explain the fabulous texture, depth and quality that is on offer here. As always, a noticeable step up. There’s more lifted aromatics of ripe nectarine and yellow flowers, leading to a mouth-watering yet super seductive palate with pristine white peach kernel and salty deliciousness. There is genuine depth countered by the vibrancy, snap, detail and salinity of serious Chablis terroir.

The Finer Details
Style - White
Varietal - Chardonnay
Country - France
Region - Chablis
Vintage - 2017
Bottle Size - 750ml
ABV - 12.5%

Moreau-Naudet Petit Chablis 2017 comes from a single 2.5 hectare site with a southwest orientation, on Kimmeridgian soils (as opposed to the higher Portlandian soils on which much Petit is grown). Established by his father in the 1970s, Pierrick's family vineyard holdings have gradually expanded over time, resulting in the current size of around 33 hectares. After obtaining a degree in oenology from Beaune, Pierrick embarked on a journey to gain valuable experience by traveling the world and undertaking various internships. Armed with knowledge and a deep passion for winemaking, he returned home to take over the family vineyards and start producing his own wines. Pierrick's cellars, ingeniously built into the side of a hill in the village, allow for much of the winemaking process to be conducted by gravity ensuring gentle handling of the grapes. The vinification takes place traditionally in stainless steel tanks, while some of the Premier and Grand Cru wines undergo a small portion of aging in used barrels, allowing for a full malolactic fermentation. One of his oldest vineyard plots, Les Châtillons, planted in the early 1970s, sits just behind the hill of the Grand Crus and showcases the meticulous use of barrel aging, which adds complexity and depth to the cuvée. In 2016, Pierrick expanded his range by starting a small négoce operation, sourcing must from friends who predominantly farm on the left side of the river. This addition includes premier crus such as Beauroy, Beauregard and Vau de Vey, as well as the grand cru of Bougros. In 2019, Pierrick inherited 8 acres of vines from his father-in-law in the southern sector of Chablis, around the village of Courgis. This inheritance includes Petit Chablis, 5.5 acres of Chablis and just over half an acre of the premier cru Les Butteaux. Pierrick Laroche's dedication to his craft is evident in every bottle of wine he produces. With a perfect blend of tradition and innovation, his wines showcase the unique terroir of Chablis, captivating enthusiasts with their finesse, complexity and distinct character. As Pierrick continues to nurture and expand his vineyards, he upholds the family legacy while leaving his own mark on the world of Chablis winemaking. On the nose, this Chablis reveals an enticing bouquet of aromas, with delicate floral notes and hints of ripe orchard fruits. The palate is treated to a harmonious balance of flavors, where the vibrant acidity intertwines with layers of citrus, white peach and a touch of minerality. The wine's complexity is further enhanced by a subtle oak influence, adding depth and structure to the overall profile. The Domaine des Hâtes Pierrick Laroche Chablis 1er Cru Fourchaume L'Homme Mort 2018 has garnered praise from critics, with its exceptional quality and expression of terroir. As a Premier Cru Chablis, this wine represents the unique characteristics of the Fourchaume climat. The limestone terroir, with its younger Portlandian limestone overlaying the Kimmeridgian, imparts a distinct character to the wine. This grand cru from the Côte de Beaune in Burgundy, France, is a true reflection of the skill and passion of the Faiveley family, who have been producing wines in the region for over two centuries. Based in Nuits-St-Georges, the famous Domaine Faiveley was founded in 1825 and in more recent times, the domaine has greatly expanded its vineyards across the entire Côte d’Or. The grapes are entirely de-stemmed and fermented in a mix of new wooden vats for the top end wines and stainless steel for the lesser cuvées. Once notorious for being fairly austere, there has been less emphasis on extraction over the last ten years and the wines show increased freshness, purity of fruit and more judicious use of oak. A contender for one of the most improved domaines in Burgundy over the last decade.

This wine is made from 100% Chardonnay grapes, which are grown in the vineyards surrounding the village of Aloxe-Corton. The vines are carefully tended throughout the growing season, and the grapes are harvested and sorted by hand to ensure the highest quality. It then undergoes vinification for 4 weeks in French oak barrels (50-60% of which are new oak) in cellars at consistent, natural temperatures and hygrometry. The wines are stirred frequently in order to keep the wine in contact with the lees and then aged for 18 months. This enables them to retain excellent tension and aromatic complexity to reveal the true character of the grapes as well as a smooth, delicate palate. 2020 is a solar vintage yet this wine shows a lot of freshness and no flavours of over-ripeness.

The Domaine Faiveley Côte de Beaune wines are displaying all the characteristics of an outstanding vintage, they are fresh and intensely aromatic. On the nose the Domaine Faiveley Corton Charlemagne Grand Cru 2020 offers oaky, fruity and floral aromas of white flowers, smoked green apple, citrus wisps, and a touch of minerality. On the palate, the wine is full-bodied, with flavours of ripe pear and apple, complemented by a hint of vanilla and a long, elegant finish. The name of Pierrick's Domaine, "hâtes" refers to an old agricultural unit of measure, similar to the English rod. Once the grapes are harvested, they are immediately pressed and settled for half a day. The fermentation process is carried out using indigenous yeast in stainless steel vats. After the alcoholic and malolactic fermentations are complete, the wines are racked off their lees and aged in used feuillettes, the traditional 132-liter barrels of Chablis, for 12-15 months. These barrels, which are seven to eight years old on average, gently open up the wine during the élevage without imparting new oak aromas or flavours. After the aging process, the wines are transferred back to stainless steel vats for 3-6 months before being bottled. The name of Pierrick's Domaine, "hâtes" refers to an old agricultural unit of measure, similar to the English rod. It evokes the long and slender fields used for sowing, where the longer rows made plowing easier with fewer turns. With nearly 12 hectares of Petit Chablis vineyards, Pierrick Laroche's dedication to quality winemaking is evident in every sip. Petit Chablis is classified as such due to the presence of younger Portlandian limestone, rather than the older Kimmeridgian limestone found in other Chablis classifications. This distinction often results in higher elevation sites, as the Portlandian limestone overlays the Kimmeridgian. Additionally, Petit Chablis vineyards tend to have less clay in the soil composition. Pierrick Laroche holds the belief that one of his largest parcels of Petit Chablis should be classified as Chablis. This particular vineyard produces wines that exhibit the characteristics typically associated with Chablis, and it is surrounded by AOC Chablis vines. The terroir of this parcel contributes to the wine's exceptional quality and distinct expression.

The Pierrick Laroche Petit Chablis 2022 offers a captivating tasting experience. The term "hâtes" was often used to describe such fields.

Philosophy:

Nose - Aromatic, Floral, Lillies
Developing scents of Granny Smith apples, orchard flowers and flint with time in the glass.

Palate - Apricots, Concentrated, Textured
Cool, broad, almost juicy yellow fruit – a more fluid style to the delivery of flavour here.

Finish - Light Spice, Persistent, Saline
Fine finishing waves of flavour – what a delicious wine and certainly a small step up again from the Chatillons!

Bought in must, again with 50% barrel elevage with a majority of 600-litre barrels. From manual harvesting to ageing in vats and neutral oak casks, everything is geared to fully express the characteristics of each appellation and to preserve terroirs and natural balances. One of the greatest domains in Chablis. Founded by William Fevre in 1957, its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domain's fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domains' six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

Today vineyards are managed meticulously by Didier Séguier. Even the more structured grand crus will come around much sooner than the 2020s, drinking well from 2026 or 2027, with an aging potential of ten years for premiers crus and between ten and 15 years for grands crus—longer under Diam closures, which I would like to see more producers using. Fèvre led the way, and others, including Louis Michel, are following.

Regarding vinification, generally gravity is favoured over pumps which could harm the quality of the wine. Brief and gentle (1½ - 2 hours) pneumatic pressing to obtain a gentle separation of the solid and liquid parts of the grape. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally. The must is run into French oak barrels (aged of 6 years in average) for 60 to 70% of the harvest. The remainder is vinified in small stainless steel vats. For maturation, the wine receives 14 to 15 months, of which 5 to 6 months on fine lees in French oak barrels, for 60 to 70% of the harvest. The end of maturation occurs in small stainless steel vats. Didier Séguier describes the house elevage process and its relationship to terroir expression, "Everything is fermented and undergoes malolactic in tank, after which the premiers and grands crus have 30% oak-aging, but never in new oak, rather in barrels between three and four years old, inherited from sister-house Bouchard Père et Fils.
