It lies on a north-facing slope and the soil composition is bluestone and overlaying limestone, with red ironstone colouring the surface. This is unlike their other vineyards, which are mostly black volcanic soil with heavy amounts of limestone on the surface. The vine rows run north-south, receiving full sun exposure throughout the day, resulting in more perfumed, prettier wines. This is always the first vineyard to be harvested. The clones used in Sangreal are 114 and 115, which they believe have mutated over time to become the ‘Sangreal clone’, now within its own microclimate.\u003c\/p\u003e\n\u003cp\u003eEach year the same descriptive notes come to mind for this wine: seductive, perfumed, seamless balance and moreish. The clones, which will acclimatise and mutate over time to become the ‘Tout Pres clone’, are 113, 114, 115, 667, 777 and MV6. With 7300 vines per ha, Tout Pres is a densely planted vineyard on the estate—hence its name, which translates as “very cosy”. This land is a challenge to farm, but well worth the effort. Well it has also taken 10 years to truly unlock the potential of the Western District site. With the support of owners John and Browynn Calvert, the soil management and vine health give wines of unique cool climate viticulture. They are a cooler expression By Farr.\u003c\/p\u003e\n\u003cp\u003eIt is a site that shows great fruit expression with a deceptively long and mineral palate. Vintage occurs during April after quite a long growing season. The vineyard is located in the heart of the Western District Farming country, approximately 150 kilometers south-west of Melbourne. Think dairy, beef, sheep, wheat, hay and forestry production. Irrewarra is surrounded by in land lakes and volcanic plains. It is a diverse and beautiful landscape that relies on a high amount of natural rainfall throughout the year. The Western plains are quite exposed to the elements which contributes to the vineyard sites mystic. The soils across the slope of the site are a mixture of grey sandy clay loams at the south end to dark brown loams with fragments of buckshot and quartz gravels towards the north. The storms and humidity don’t ease until late January but the team was able to keep the canopies open and the fruit healthy until the disease pressure eased. The season turned come February and the berries developed significant colour and depth of flavour by March. We started picking a little Pinot and Chardonnay’s mid to late March and took full advantage of the long and mild season that has resulted in layered and great site expressions regardless of variety. All in all the crop level was of the norm, average tonnages and the fruit extremely healthy. Credit to the team once again as the ferments where very expressive and show the potential to have come to expect of a season with a drying and cool evenings end. There is a note of whole bunch, that green zone crunch, tang and lift and it finishes with such a pure crack of pepper; pink, campot and some white pepper too. There’s ripe fruit, cherries and dark plums, there’s the hit of whole bunch, wood and earth. There’s so many points of light in this wine, it’s hard to single out just one key theme. Complexity begins to describe it, but sounds to lack emotion. Only natural yeast is used for the fermentation process, which takes roughly 12 days. Grape-stomping (known as pigeage) occurs two to three times a day, depending on the amount of extraction required and the wine is then placed in 50 to 60 per cent new Allier barrels by gravity. It is racked by gas after secondary fermentation, then again at 18 months to be bottled. The season turned come February and the berries developed significant colour and depth of flavour by March. We started picking a little Pinot and Chardonnay’s mid to late March and took full advantage of the long and mild season that has resulted in layered and great site expressions regardless of variety. All in all the crop level was of the norm, average tonnages and the fruit extremely healthy. Credit to the team once again as the ferments where very expressive and show the potential to have come to expect of a season with a drying and cool evenings end. The texture is chiselled, the flavours confident and intense, but they don’t take over. It’s not an apricot wine, for instance. This has a note of dried apricots, but it also carries a stone fruit element, white flowers, ginger, barrel work and then terrific acidity. It’s like Chardonnay with benefits. There’s never much, there never has been, but the Viognier was always the hidden treasure, only to be found by those that had tried the obscure and rare appellations of Condrieu or Chateau Grillet. Don’t chill it too much, just let it be cool, not frigid. I’ve said too much. It’s just terrific, an incredibly impressive glass of wine. Soil is King as the East côte has the least amount of clay and therefore least water-holding capacity resulting in it being harvested first even though it is the coolest côte of the three. All I’m saying, is that when I sat outside with dinner and had a glass of the GC, it reminded me of the time I sat in the square in Meursault and chose the “expensive” glass of wine. That smell of chalky cellars and stone fruit mixed with barrel char and something match stick like. A softness and tension that’s more like a gentle pull than either or. At this level of quality, hyperbole is all we have, and I hate that. It appears foolish at best and untrustworthy at worst. So here goes nothing. A green gold colour in the glass, tending towards straw, it’s crystal clear, and if liquid can appear chiselled, then this is it. The nose is restrained yet detailed, a common thread from this house. It’s precise yet comforting. It’s redolent of light caramel (I shouldn’t lead off with that, but it’s there) ripe nectarine, struck match; faintly, and barrel spice. I guess the caramel note is more appropriately a creaminess with warm barrel notes, but who has time to explain it all. The palate leaves you feeling relaxed, a lovely softness and masked acidity that makes your mouth water, but not feel like you’ve encountered too much acid. It’s alarmingly supple and easy to drink and the way it sits quietly in the glass makes it easy to see how these types of great wines can easily be overlooked for loud, brash, show ponies. Close but Farr she replied as though she discovered a hidden meaning. Kind of, I smiled. In the glass a big hit of amaro like dark fruit and stemmy spice, a real dark shade of cherry and char. The lift comes from the acidity and stems and it works as a counterpoint to the fruit. It’s savoury and layered, shifting from beguiling and seductive to edgy and angsty. Gunsmoke, maybe Russian caravan tea, albeit a subtle version or a memory of it, dry earth, charred wood, cornichon, black bean and mushroom. You can almost taste the struggle of these tightly packed little vines that overlook the moorabool valley. As your olfactory bits acclimatize, the second sniff is all fruit and something like ginger; sweet but with purpose. Warm spices like mace and cardamom dominate and rhubarb, cherry and chinotto round it out. I tasted a wine blind last week that Nick sent me and I starting talking about the fruit profile. He then asked about tannin ripeness, which I had overlooked entirely. (These folk are into the minutiae when it comes to their wine.) The RP is complete. Fruit expression, house style, physiological ripeness (the tannin thing he asked me about) is all resolved, all fully formed and ready. The acid line works more like a Soprano, balancing and thrilling us. The fruit expression just right, dark Xmas cherries, bags of spice and tang and ripe lickable tannins. Remember the bit about hyperbole I mentioned earlier?
