It was low yielding and even more so due to the extraordinary harvest conditions. It was picked at the end of harvest in mid-February on a Fruit day on the Biodynamic calendar. Capturing the beautiful natural acidity of Chenin, the wine was chilled to finish with 130 g\/L of sugar.
