Rethinking typical scotch whisky making, Glenmorangie Allta uses a strain of yeast (Saccharomyces diaemath for you biology nerds) to create a new and exciting Scotch whisky experience. The yeast was carefully added on a schedule with the barley in the whisky making process in order to fully develop the flavours and aromas. This process concluded with an extremely fragrant spirit, drastically different, yet similar to the classic Glenmorangie. Using superior ex-bourbon barrels, the whisky gained richness and helped showcase the fruitiness the yeast brought along. Shedding light on an aspect of distilling for so long overlooked, Glenmorangie Allta is a beacon for the future of Scotch whisky.
The colour of Glenmorangie Allta is a pale golden hue, with a nose of biscuits, bread, and lighter floral notes. This is coupled with secondary notes of vanilla, raisins and mandarin oranges. A nice, crisp citrus texture brings forth flavours of butter candy, vanilla and orange syrup, while the yeast tangos in the background, bring a gentle mint and sweet chili. This culminates in a long, earthy finish.
